Peanut butter
Chicken skewer with peanut butter satay sauce
Recipe
Serves 4:
500 g chicken breast, cut into pieces
2 tablespoons soy sauce
2 tablespoons sesame oil
1 tablespoon honey
1 clove garlic, finely chopped
1 teaspoon fresh ginger, grated
1 tablespoon lemon juice
salt and pepper
150 ml coconut milk
3 tablespoons crunchy peanut butter
1 tablespoon soy sauce
1 tablespoon sugar
1 tablespoon lemon juice
1 clove garlic
1 teaspoon red curry paste
1 teaspoon Sriracha sauce
Prepare marinade for chicken: In a large bowl, combine soy sauce, sesame oil, honey, garlic, ginger and lemon juice. Season with a pinch of salt and pepper.
Cut the chicken into cubes and add them to the marinade. Mix well to coat evenly. Cover the bowl with cling film and marinate in the fridge for at least 1 hour.
Prepare the peanut satay sauce: In a small saucepan, combine the coconut milk, peanut butter, soy sauce, sugar, lemon juice, garlic and red curry paste.
Heat over medium heat, stirring constantly, until all ingredients are well combined and the sauce is thick and smooth.
Taste and adjust seasoning, adding salt or Sriracha sauce for extra heat.
Preheat a grill to medium-high or heat a frying pan with a little olive oil.
Thread marinated chicken pieces onto wooden skewers.
Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and golden brown on the outside.
Arrange chicken skewers on a serving platter.
Serve with the peanut satay sauce on the side for dipping, or pour a little over the skewers.
