Peanut butter
Banana bread with peanut butter
Recipe
Serves 6 :
3 ripe bananas + 1 for decoration (optional)
100 g butter + 20 g for the tin
2 eggs
60 g honey
200 g flour type 55
8 g baking powder
1 pinch of salt
Optional: 100 g dark chocolate chips or chopped chocolate
Melt the butter over a low heat and leave to cool off the heat.
Peel the 3 bananas and mash them in a bowl. Whisk the eggs with the honey to make them white, then mix with the mashed bananas and peanut butter.
Add the melted butter, stir, then add the dry ingredients (flour, baking powder and salt). Stir again until you have a smooth dough. Optional: Add the chocolate chips to the mixture.
Line a buttered tin with the banana bread mixture.
Optional : cut a banana in half and arrange it lengthways in the tin, on the sides, to allow the cake to swell when cooked.
Bake for 40 minutes at 180°C. To check doneness, stick the tip of your knife into the centre of the cake, it should come out dry.
