Peanut butter
Fried noodles with beef, vegetables & peanut butter
Recipe
Serves 4 :
200g rice noodles
250g rump steak
3 tbsp soy sauce
2 tbsp sunflower oil
2 cloves garlic
10g ginger
1 courgette
1 carrot
1 onion
1 tbsp honey
1 tbsp cider vinegar
1 pinch of salt
1 pinch pepper
5g fresh coriander
Cook the noodles according to the instructions on the pack. Drain, rinse in cold water and set aside.
In a bowl, mix the peanut butter, soy sauce and rice vinegar until smooth. If you want a sweet touch, add some honey to the sauce and stir well. Set aside.
Heat the oil in a large frying pan or wok. Add the chopped garlic and ginger and stir-fry for about 1 minute.
Add the beef slices to the pan and stir-fry for about 2-3 minutes, until browned and cooked through. Remove the beef from the pan and set aside.
In the same pan, add a little more oil if necessary, then add the chopped onion, courgette and carrots. Stir-fry for around 3-4 minutes, until the vegetables are slightly tender.
Add the cooked noodles to the pan with the vegetables, then pour the peanut butter sauce over them. Mix well to coat the noodles and vegetables with the sauce. Put back the beef slices to the pan and stir again to heat through.
Serve the beef and peanut butter noodles on individual plates. Garnish with fresh coriander.
